Origin: Shizuoka, Japan Cultivar: Yabukita Elevation: 350m Harvest: May 3, 2021 Honyama is a notable distinction of sencha from a high mountain region of Shizuoka, Japan. Okouchi is a small town within this region which was historically significant as one of the premium cultivation sites of tribute tea for the Emperor. Our partners keep up with rare practices of handpicking and light steaming with mountain spring water to honor the traditions of this prestigious tea region. The valley farms and cool, foggy weather provide a special quality of tea that exudes the phenomenon known as Yamano Kaori, literally "mountain aroma." The mists shroud the tea bushes during peak harvesting season, which enhances the floral aromas in the tea and allows for gradual growth, concentrating amino acids and reducing sharp tannin. Yamano Kaori is understood as "mountain character" by Japanese tasting experts and is defined by the balance of bittersweetness and mild briskness of tannin. The infusion is lustrous with a lemony-lime yellow hue, has stimulating springtime energy and high levels of umami, amino acids and sweetness.
