Shincha literally means “new tea” and is representative of the first plucks of the tea harvest. Each region in Japan sees a slightly different first harvest due to the great variance in terrain and the effects of elevation. This year on Kagoshima Mountain they picked exclusively from Saemidori plants to make this single-cultivar Shincha. It comes as no surprise that Saemidori translates to “bright green” when observing the brilliant hue of its infusion. This Shincha produces a vivid, very bright green liquor and has a remarkably fresh-savory flavor profile that produces a slightly salty umami balanced with a pleasant, sweet grassiness. Renowned throughout Japan as pioneers of organic tea cultivation, the Nishi family has captured the vibrancy of spring in this remarkable hand-picked single-cultivar gem.
